There are some things I’m looking forward to…
I’m looking forward to eating these fig and olive crackers with some soft goat cheese/brie.
I’m looking forward to eating this kind of salad every chance I get:
I call it the RANDOM MIX SALAD. I know I always have something like this, but today’s was uber special and way bigger than ever before. It was full to the top with spring mix, then I put some poppyseed dressing (to let it reduce the greens down a bit). Then I started piling on the goods: chicken breast; baked sweet potatoes; blueberries; then some sweet potatoes and carrots that were cooked in a Korean chicken dish by my mama; and steamed asparagus!
It just doesn’t get more random or more colorful… or more delicious than that.
What else am I looking forward to?
The Go Green St. Patrick’s Day Half Marathon/10K/5K this Saturday. There are a few other people from church running a distance, and I think it will be a great (BUT RAINY) day of running and celebration. It will be the first time for many of them to run a race :D.
I’m also looking forward to the fact that I won’t be racing. I am simply out there to run, have a good time, cheer people on, and eat yummy food after. These days, I only want to go all out and RACE for certain races (like the Rock’n'Roll SJ Half) or distances that I’ve never done.
I’ll be running my first 10-mile race on April 1st, so I’ll actually go all out when it rolls around.
I did a 41 minute Plyometric Cardio Circuit Insanity video today. I was pretty sore after the Insanity workout yesterday, but I was feeling pretty good before doing this workout….
and now I’m back to being sore.
I am going to go to Joe’s to study, probably eat some of them fig crackers with goat cheese, and I MIGHT want to stop by at the gym later tonight to do some easy running or elliptical (I’m so antsy from not running. PLUS I have so many magazines piling up because I haven’t been to the gym to read them! I literally have like 7 magazines just sitting there being neglected).
